Depends on the required fire flow. I have been at incidents with as many as 3 fill sites.
How many drop tanks are you using?
Again, it depends on the required fire flow. It may be just 1 for one engine, it may be 2 or more per engine depending on fire flow.
Do you sent them in front,rear or on the side of your engine?
Normally on my #1 POC FD we will go rear, #2 POC FD we willgo rear or ide depending on the situation.
Do you run emergence mode though out the whole time?
Unfortunately, most often yes. Although many times drivers will shut them off on their own accord once there are tenders waiting in line to dump.

If I'm operating in a tender I usually run silent and without lights when going to get water. Then I'll light it up while at the hydrant for traffic safety.
Like Don said, everything else will vary depending on the placement of the apparatus, the size and complexity of the incident, etc....
We will try to set up 2 fill sites. We also set up at the rear and normally 2 tanks the tanks are set up in a diamond figuration so we can have 2 tankers dumping at the same time. We also unfortunately ran with lights going 90% of the time.
Usually we just have one fill site as there's nothing in our area larger than houses or barns. Most of the time we use one tank, but if the fire is big enough and there's room we'll use two. Having the dump tank on the side offers the most convenience, you can get more flow, but is not always possible due to issues with space. Most roads are two lanes around here. Our newer engines are equipped with front suction intakes and have a 6' section of hard suction and a low level strainer attached on a swivel, so setting a dump tank in front is very fast, but we are limited to around 1000gpms with that setup. But that's usually adequate on most fires. We run lights and sirens most of the time, at least until we are in the overhaul stage.
