I think that it is a cool concept... I just dont see it working well in practice. Taking a $300 iphone onto the firescene is probably not the best idea. I cant imagine apple replacing it when you bring it back completly filled with water and smoke and say "yeah, I'm not sure what happened to it." Also, alot or your small town/rural dept's are running older equipment that isnt going to perform like brand new trucks/pumps.
I think the relationship between an engineer and his pump is a pretty special one... I know that sounds cheesy but ask any good engineer and they will tell you the same thing. Those same true engineers will also tell you that they can run their pump alot better on their own without the help of some iphone app.
The formulas and things are nice to have but its really something that you just have to know and understand in your head.

What ever happened to the old days when they needed more water, ya just cranked it up. When they were flying around hanging on to the hose, it was probably time to cut it back.
Might be a good app if you can get it ready for the blackberry.
