There used to be a time when the wings of chickens were considered pretty much as being useless ... they were the "throw away" part of the bird ... they couldn't give them away. Ah, but then one snowy night in Buffalo, a bar owner threw a bunch in a pan along with a crazy mixture of spices, and the rest is history.
The problem with what came to be known as Buffalo Wings is that they are becoming more expensive to buy and to make.
In search for an alternative that would give the same spicy taste, I did some experimenting and came up with Buffalo Balls.
The ingredients are:
1 pound of ground beef
3/4 cup seasoned bread crumbs
1 egg
2 Tbs. oregano
2 Tbs spaghetti sause
Place these ingredients into a large mixing bowl and kneed together until well blended. Next you need to form the mixture into 1 1/2 to 2 inch balls.
At this point you are thinking, "Hey wait a minute, I just made a bunch of meatballs !" ( Ahh, it's a sure sign that you're officer material )
Now, In a clean bowl empty a pack of your favorite dry Buffolo Wing coating mix. Make it as hot as you like or as mild as you like, Roll each meatball in coating mix and place on a cookie sheet or in a shallow baking dish.
Bake in a 350 degree oven for 35 minutes, turning the ball about half way through the bake time.
Makes about 2 dozen.
By coating the outside of the ball, you will find that the flavor cooks down into the meat. If you are adventureous, you can try blending the wing coating right into the meatball mixture and create some real fire balls !
