I've won every chili cook-off I've entered with this...have fun! And remember...NO BEANS!

5 to 6 lb roast (something with a little fat, but not a chuck roast)
1 can of chipotle peppers in adobo sauce (keep the sauce and chop the peppers)
Peppers (use 2 large green peppers and 2 of every kind of hot pepper you can find)
1 cup of chili powder
1 tblspn of paprika
2 tblspns of garlic powder
2 tblspns of onion powder
2 large onions
1 large can of tomato sauce (plain)
1 small can of tomato sauce (plain)
1 small can of chopped tomatoes (garlic and onion or with some seasoning)
1 to 2lbs of ground beef or ground pork
1 can/bottle of beer (be imaginative)
oil for cooking meat
1 bunch of cilantro
salt
pepper

Trim fat from roast and cut it into about 3/4 inch cubes. Mix dry spices in a bowl and liberally season meat chunks. In batches, sear the outside of the meat in a large pot and remove to a bowl. Cut the peppers in half and remove the ribs and seeds, dice. Dice the onions and combine with the peppers. In the same pot you cooked the meat in, add a little more oil and cook the peppers, onions, and garlic with whatever you have left of the dry spices until nice and soft. Add the meat, remaining adobo sauce and the 3 cans of tomato stuff, beer, bring to a boil and then cover and reduce to a simmer for hours...HOURS! (like 4 at least) The meat should be falling-apart-tender by the time it's close to being done. Then add the ground beef and let it cook in the chili. (this should thicken it up a bit) Stir in the chopped cilantro and you should have one kick-ass chili
