I am curious how long you folks like to leave your deer hang before butchering. I like to leave on hang two days. At three the most. I have known people likes to leave them hang seven days.

wow within 24 hours, that sure can change any plans you have. here in wisconsin you can check them in any time durring the season and then they give you 24 hours after the season closes to do so. so with the opener being tomarrow november 22nd here and it closing on the 30th someone could harvest a deer tomarrow morning and they have until like 4 pm december 1st to check it in.
I don't hang mine at all.I bring it home and quarter it up immediately and put the meat in a cooler full of water.I drain the water everyday until the water stays clear then process the meat soon afterwards.If it gets warm I'll add ice to the water to keep it cool.This method works great for adding moisture to the meat without adding in any fat.
