It's pretty simple, and you have to figure out how much of each ingredient you will need depending on the size of the crew...
-Boneless chicken breasts
-Black beans (canned is fine, but you have to drain them)
-Shredded Mexican style cheese
-Enchilada sauce
-Large flour tortillas
Season the chicken breasts with just salt and pepper and bake in the oven until cooked through...while chicken is cooking, mix in large bowl the beans, cheese, and enchilada sauce...when chicken is cooked, shred with fork and put the shredded chicken into the mixture...this is your 'filling' for the enchiladas...the more chicken and mixture you have, the fatter the enchiladas will be...fill each tortilla with mixture and roll...place in a baking pan side by side and cover with extra enchilada sauce and cheese...bake in oven until cheese is melted and mixture is heated through...serve with sour cream and some Mexican Cheesy Rice...and if at home, a Carona or two...stay safe...
