Could someone direct me to a source that would show proper helmet colors for the various officers in the fire department? Shouldn't the Chief be the only one to wear white?
White seems the most consistent color for Chief Officers across the US. As for the rest, it appears to mostly a department thing. Requiring "standard colors" nationwide would be paramount to requiring all fire apparatus to be red. It just ain't going to happen in my lifetime.

In my travels, this is what I've seen for company officers. Red-here. Black with the skunk strip- LA County. Black with white shield-FDNY. White-Loundon County. The only common thing I've seen is chiefs wear white. After that, it's anybodies guess.
Down in SoCal (where I used to be), it was pretty much the standard white for Chiefs, red for Captains and yellow for Engineers and FFs. Some medics were in blue...others yellow since most are FF/medics.
Up here, Chiefs also wear white, but most everyone else wears black (lots of leathers up here). We differentiate with reflective material color though: Captains have red or orange tets and Engineers and FFs have yellow ones. Some dept's also use a different color shield for officers...we all (including Chiefs) have black shields with red panels. FFs/Engs have a number (their "seniority number") in the middle and Captains and Chiefs have a rank medallion.
Just to add some more to the discussion though: when I was in Australia a couple years ago, I discovered they use the opposite color scheme of us. FFs "down under" wear white helmets, and Chiefs wear yellow (company officers are still red). I came across a restaurant fire in Hobart, Tasmania and was seriously wondering why there were so many Chiefs loading hose. :-D
