What is the difference between a "New Yorker" & a "Houston" leather helmet??

What is the best way to keep the leather pliable & not dry out??

Which style (NY or Houston) is lighter / heavier??

The leather is is not 'pliable' as such and there is no real leather maintenance needed.
The Sam Houston is a little bit heavier.

What is significant (history) of the Sam Houston helmet??

Can hi-quality leather polish be used on the natural leather, to give it a rich depth & shine?? Mine will NEVER be even close to a fire - a mantle piece treasure.

No the New Yorker is a little taller, the brim is a little different. Really there is not much difference. They make much cheaper helmets for show or presentation use. Check the MSA/Cairns web site.

The Sam Houston is both OSHA and NFPA compliant and the New Yorker is only one or the other compliant(I can't remember whic one). The Sam Houston is heavier and does sit taller.
