Brisket... Trim the fat or not................

When you do a brisket, do you trim the fatcap or leave it intact? I trim part of it, especialy if it is a really thick fatcap.

my favorite is bbq spare ribs slowly cooked for 3 hours then placed on the grill on ow for additional 1hr. they are finger licking and fall off the bone , though I use my own special family secret bbq sauce.
